no. 6: a time of thanksgiving.




this time of year is one of our favorites. it really reminds us of the many blessings in our lives- our family, our friends, and the good conversation & food we are able to share with them. in honor of thanksgiving, we would like to share with you some of our favorite recipes that are both in season & good for this time of year:

& here's a recipe for an autumn soup... originally from {simply in season}- one of our favorite cookbooks

Autumn Vegetable Soup
(This has become my favorite soup for the season. It has a lot of great fall vegetables that you could find at your farmers' market and it is quite filling. You can try using different combinations of fall vegetables or adjusting proportions to your liking. I like using twice as much barley and pasta to make the soup more hearty. -Luke)

1/2 c onion (chopped)
2 cloves garlic (minced)
In soup pot saute onion in 1 Tbl olive oil over medium heat until soft. Add garlic and saute 1 min.

1/2 c each: kale, cabbage, carrots, red sweet pepper (chopped)
1/2 tsp each: salt, dried basil, dried oregano
1/8 tsp pepper
Add and saute a little, then turn heat down to low, cover pan, and let cook about 5 min, stirring ocasionally.

2 c bean cooking liquid or vegetable broth*
1 c tomato juice
3/4 c cooked beans
1/2 c corn
2 tsp dried instant barley
2 tsp orzo pasta
1 1/2 Tbs red cooking wine
(optional)
Add and bring to a gentle boil and simmer about 15 min.

1/2 c tomatoes (chopped)
1 Tbs fresh parsley (chopped)
Add tomatoes and parsley, simmer another few minutes.

Eat. Enjoy.

*Make your own vegetable stock: Save vegetable scraps in a bag in the freezer. When you have a good amount, boil them in water with some crushed garlic, salt and pepper. Use about the same amount of water as vegetables. Bring to a boil, then simmer for a few hours. It's that easy.

  1. a lovely table. i am going to try your soup recipe. isn't homemade stock the best. we always have some in the freezer. wishing you two a wonderful, joyous thanksgiving.
